Dairy Free / Gluten Free Chocolate Chip Banana Bread
My stomach is capable of digesting both gluten and dairy and I eat plenty of both, so the fact that I made this, liked it, and am recommending it to you should mean something, right?
I don't know. But regardless of any food allergies or lack there of, if you like banana bread, you'll love this.
Ingredients:
- 4 very ripe bananas
- 2 eggs
- 1 cup brown sugar
- 1 1/4 cups of gf flour (or ap flour, if that's how you roll)
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup coconut oil, melted
- 1/4 cup coconut milk
- 1 cup dairy free chocolate chip (plus extra for sprinkling on top as soon as it comes out of the oven)
Instructions:
- Preheat oven to 350 degrees F.
- Mash bananas.
- Mix in the eggs.
- Add the rest of the ingredients, saving the chocolate chips for last.
- Spray a loaf pan very generously (or two if your pans are ridiculously small like mine).
- Bake for 50-55 minutes, or until a toothpick comes out clean when poked into the center.
Super easy, no?
Hi Karforabite,
ReplyDeleteWould you consider posting the recipe quantities in grams? I've tried looking up conversion charts, but the internet seems to be conflicted about wether you have different conversions for different substances, eg; sugar, flour, milk, oil. I can't find out if they have the same weight conversion, or if I need to factor it in. I tried the recipe already, but I fear the conversion I used was wrong because it seemed quite oily. Thanks in advance! Rx
Hi Rosenina9!
DeleteThanks for trying the recipe! Unfortunately, I'm unfamiliar with the conversions myself, so any information I would put would be determined by the same conversion charts online. I might suggest investing in a set of measuring cups?
Thanks again,
Karianna Roberts
Hi Karianna,
DeleteOk, no worries, then my main question is about the coconut oil. In the country where I live the room temperature leaves the oil extremely solid. Is it supposed to be a cup of solid or liquefied coconut oil?
Rx
I believe I measured it when it was solid, then melted it to mix in with the other ingredients. I hope that helps!
